Best ever pot roast recipe

I made a pot roast last night for dinner, and I have to say, it may be the best ever. I thought I would share the recipe with you. I have never made pot roast before, so here is my new recipe....
No, I don't have a picture, it went fast.

1 roast (2-4 lbs.)
1 large white onion- cut up in decent size chunks.
1/2 bell pepper- cut up
1 roma tomato- cut up in chunks
1 whole jalapeno- seeded and cut
1 can tomato sauce-
1 bunch green onions- cut up
2 bay leaves
garlic- to taste
fresh sage- cut with scissors
fresh thyme- cut with scissors
salt, pepper
Tony's-or other seasoning
celery salt- to taste- I used about 2 tablespoons
olive oil
baby carrots- I used a bag full.
potatoes- any kind you love. cut up in 2 inch pieces.
1 cup water

Preheat oven to 275 degrees.

In a huge pan, (I used a massive frying pan that was about 5 inches deep.) drizzle enough olive oil to cover the bottom. Set stove to medium-high.
Add roast, and sprinkle salt, pepper and Tony's on meat.
Heat until there is a crust- like look all over the meat.

Add everything else, except garlic.
I cut a few holes in the meat, and stuff a few cloves of garlic inside.

Pop in oven for about 4 hours, and baste about every 30 minutes.

Super easy, huh?

I served this with a salad and french bread. It was great.

Ah, sometimes absence makes the heart grow fonder....

Okay, so maybe I am not a very romantic person. Maybe I am selfish, and wish I had time for myself.... who knows. All I know is I feel claustrophobic!

So, if you know me already, then you know that my husband is a U.P.S. driver, and apparantly, when you work for this company, it takes a few years before you are actually full time...

My problem is, that my husband is home everyday around 10:30 a.m. I don't even have time to miss him. I really liked the idea at first, don't get me wrong, I thought we could spend so much time together, my house would be super clean, I could get some time for myself and we could get some home improvement things done around the house, like my floors, that began in freakin' MARCH! No, they aren't done yet. That would be way too easy...

In all reality what has actually happened is that I ended up being a caretaker of another child. A really big child. There are dirty socks under the couch, there are dirty dishes piled up in the kitchen, our electricity bill is through the roof, and on and on.....

My husband has made it very clear that I am just being selfish. I don't think so. I think what I am is mad. I am mad that a grown man cannot go and get a full time job, or at least a temporary job for the time being. I am mad that now when I tell my very outspoken 3 year old something, there is "daddy" undermining me. UGH!!

Thanks for letting me vent. see, I already feel better! So, do you have any advice for me?

Okay, I think I am really back this time!

I am so sorry I haven't been posting anything lately... the thing is, I dislocated my wrist a few months ago, making my bed, no less. Then a few weeks ago, I was washing dishes, and my cheap-o glass fell apart in my hands cutting my knuckle practically off. Yes, it is harder than most think- being a homemaker and a total klutz......
What I am getting at though, is that I am back, and I am so ready to blog! I am bound and determined to post something daily from now on! I hope that there is someone still reading my blog, as I have tons of things to say... haha! Pull up a stool, and join me in my thoughts, and please bear with me, because I do tend to hurt myself quite often these days!!
With all that said, is there anything my readers would like to see more of? I am pretty worn out of just posting my shopping trips... I was thinking about recipes, reviews, freebie finds, great ideas on the cheap with the kids, etc... Just let me know! Thanks so much!

Here's what I got at Walgreen's today....

2 stayfree pads $6.29 each (used $3 Walgreen's in store coupon, took off $6, and used BOGO coupon) =.29 cents/2

electrasol finish $3.49 (used $2.50 coupon) = .99 cents, plus $1 register rewards

2 reach floss $3.75 (used $2 Walgreen's coupon, took off $4 for both, and used BOGO coupon, $1 coupon)
=-1.25

2 reach toothbrushes double packs $3.99 (used $2 Walgreen's coupon, took off $4, BOGO coupon, and $1 coupon) =-1.01

total before coupons= $31.55
total after coupons= $.02 cents plus $1 register rewards from electrasol.

Of course I did this same transaction quite a few times, just remember to use manufacturer's coupons first, then Walgreen's. And if you pay with your register rewards, you won't get another one for the same thing.
